- 250 grams (1⁄2 pound) spinach and tomato animal shaped pasta
- 30 grams (2 tablespoons) olive oil
- 4-5 garlic cloves, minced
- 1 zucchini, peeled and sliced
- 1 carrot, sliced
- 1 kilogram (2.2 pounds) tomatoes, peeled and chopped
- 1 teaspoon sugar
- Salt to taste
- 15 grams (1 tablespoon) parsley, minced
- Put the olive oil into a large saucepan and turn heat to medium. Add the garlic and sauté for 1 to 2 minutes.
- Add the sliced zucchini and carrot to the garlic and olive oil and cook for 4-5 minutes more, stirring occasionally.
- Add the tomatoes, sugar and salt. Cook for 10 minutes more, until the sauce thickens.
- Meanwhile boil 2.5 liters of water and the desired amount of salt in a large pot. Once it boils, add the pasta and cook for 6 minutes. Drain.
- Mix the pasta with the sauce and season with parsley.
